They aim to take the best of Cognac, Armagnac, and eaux de vie from the surrounding regions in order to craft something that’s “bigger than the sum of its parts.” 7 components go into the Seven Tails XO Brandy: French Brandy (3 to 5 years old), Armagnac Ténarèze, Armagnac (4YO), Armagnac (20YO), Armagnac (30YO), Cognac (8YO), and Cognac (10YO). The blend is combined and finished in port casks, letting the aromas and flavors marry while extracting additional fruity notes from the casks. The Brandy is bottled at 83.6 proof.
